Mint Cream Cheese Brownies

2 packages (8.0 oz) cream cheese, softened

¼ cup milk

2 cups sugar, divided

1 cup butter, softened

2 pouches (1.25 oz) Land O Lakes® Cocoa Classics® Mint & Chocolate Hot Cocoa Mix

4 eggs

2 tsp vanilla extract

1½ cups all-purpose flour

¼ cup baking cocoa

¼ tsp salt

1 cup crème de menthe baking chips

Additional crème de menthe baking chips, optional


1Preheat oven to 350°F.

2Coat a 13-in. x 9-in. baking pan with cooking spray; set aside.

3In a small bowl, beat the cream cheese, milk and ½ cup sugar until fluffy; set aside.

4In a large bowl, cream the butter, Land O Lakes® Cocoa Classics® Mint & Chocolate Hot Cocoa Mix and remaining sugar until light and fluffy.  Add eggs and vanilla until well combined. In a small bowl, combine the flour, cocoa and salt; add to the butter mixture.  Mix until combined.

5Spread half of brownie batter into prepared pan.  Gently spread cream cheese mixture.  Top with remaining batter.  If desired, cut through batter with a knife to create swirls.

6Bake for 35-40 minutes or until a toothpick inserted near the center comes out clean.

7In a small microwave safe bowl, melt baking chips.  Place melted baking chips in a plastic resealable plastic bag.  Cut one corner of bag.  Drizzle over brownies.  Sprinkle with additional crème de menthe baking chips, if desired.
