A versatile scratch cupcake mix that can be customized by using any of Land O Lakes® Cocoa Classics® Hot Cocoa Mix 18 flavors!

Ingredients

1 1/4 cup all-purpose flour

1 1/2 cup (7-packets) your favorite Land O Lakes® Cocoa Classics® Hot Cocoa Mix

1 tsp baking powder

1 tsp baking soda

2 eggs

1/2 cup vegetable oil or melted butter

3/4 cup water

Directions

1Preheat oven to 350° F.

2In a mixing bowl, combine hot cocoa mix, flour, baking soda and baking powder.

3Add eggs, water and oil, mixing until the batter is smooth with no lumps.

4Pour batter into cupcake cups lined with cupcake liners, filling about 2/3 full. Tap pans lightly on counter to remove any trapped air and to level the batter.

5Bake for 20 minutes, or until a toothpick inserted into the cupcake comes out clear.

6Top with marshmallow cream cheese frosting.

Tips & Tricks:
• You can use any of Land O Lakes® Cocoa Classics® Hot Cocoa Mix 18 flavors to customize your cupcakes!
• The recipe calls for all-purpose flour, but cake flour will give a lighter texture and more delicate crumb.
